Icings
and Frostings
Icings and frostings can make a delicious
cake even better. Some you use on the top and sides, others
can be used as a filling in a sandwich cake. Here is a selection
of some of the most useful.
Chocolate Butter
Cream
Use this as the filling in a sandwich cake.
Ingredients
6oz butter
2 cups (12oz) icing (confectioners) sugar
2 tbs cocoa powder
1 or 2 tbs warm water
Method
1. Sieve the cocoa powder and icing sugar together.
2. Beat the butter until soft
then gradually add the cocoa and icing sugar, beating continuously.
Add 1 or 2 tbs of warm water as necessary. Beat until soft and
creamy.
Glacé
Icing
Use this on the top and sides of cakes. It give a thin, shiny
coating. You can also use it to decorate the tops of small fairy
cakes.
Ingredients
1 cup (6oz) icing (confectioners) sugar
1 tbs cocoa powder
1-2 tbs warm water
Method
Sieve the icing sugar and cocoa together then gradually add
the water until the mixture will coat the back of a spoon.
Chocolate
Frosting
Use this to coat the outside of a cake.
Ingredients
1 cup (6oz) icing (confectioners) sugar
1oz plain (semi sweet) chocolate
1oz butter
Method
Bring a pan of water to the boil, take off the heat, then stand
a bowl over it. Put all the ingredients in the bowl and beat
until well combined.

Satin Frosting
Again, use this to coat the top and sides of a cake.
Ingredients
3oz butter
2 cups (12oz) icing (confectioners) sugar
2 tbs cocoa powder
3tbs single (light) cream
Method
Sieve the icing sugar and cocoa together. Beat the butter until
soft then gradually beat in the cocoa and sugar mixture and
the cream. Continue to beat until the frosting is smooth and
well mixed.
