Chocolate Mousse
Serves 4 - This is a great cold dessert, delicious, quick and easy to make.

Ingredients
100g/4oz good plain chocolate
4 eggs, separated
Whipped cream to decorate

Method
1. Break the chocolate into pieces and melt (see Basic Techniques).

2. When the chocolate is melted, stir in the egg yolks, then cool.

3. Whisk the egg whites until stiff and forming peaks. Then fold into chocolate mixture.

4. Serve either in one big dish or individual dishes. Decorate with the whipped cream. You can sprinkle grated chocolate or chopped nuts over the cream.

White Chocolate Mousse
Serves 8 - This is a great cold dessert, delicious, quick and easy to make.

Ingredients
175g/6oz white chocolate
3 tbsp milk
2 eggs
1/2 tsp vanilla essence
Whipped cream to decorate

Method
1. Break the chocolate into pieces and melt (see Basic Techniques).

2. Beat the eggs and milk together then gradually beat the mixture into the melted chocolate.

3.Put the mixture in a bowl and place over simmering water and heat until the mixture thickens, stirring occasionally. Do not allow the mixture to boil. Stir in the vanilla essence.

4. Leave to cool in the refrigerator for about 30 minutes, stirring a couple of times.

5. Beat the chilled mixture. Then beat the cream into soft peaks and fold into chocolate mixture.

6. Serve either in one big dish or individual dishes. Decorate with the whipped cream. You can sprinkle grated chocolate or chopped nuts over the cream.

Chocolate Custard Dessert
Serves 6 - This is another quick and easy dessert to make and it is popular too.

Ingredients
75g/3oz good plain chocolate
25g/1oz butter
2 eggs, separated
1 egg yolk
2 tbsp white wine
Whipped cream to decorate

Method
1. Break the chocolate into pieces and melt with the butter over a pan of simmering water (see Basic Techniques).

2. When the chocolate is melted, beat in the egg yolks, then stir in the wine and cool.

3. Whisk the egg whites until stiff and forming peaks. Then fold into chocolate mixture.

4. Serve either in one big dish or individual dishes. Decorate with the whipped cream. You can sprinkle grated chocolate or chopped nuts over the cream.
